a favor for zie's mom who's been requesting me to teach her cook this since her arrival last errrr..friday. been quite sometimes since i last cooked any of this and its definitely a perfect option to manipulate the bountiful harvest from the farm.

Rojak Mamak@ PasemboqThe Fritters
Ingredients:
1kg flour
1 egg
1 1/2 tsp salt
2 tbsp. sugar
1 packet Instant yeast
2 tbsp butter/margerine
900 ml warm water
for onion fritter:
2-3 onion- finely diced
2 green chilles- seeded n diced
corriander leaves - chopped [optional]
for coconut fritter:
6 tbsp grated coconut [white portion only]
4 tbsp rice flour
1 tbsp sugar
for tumeric fritter:
1-2 tsp tumeric powder
Method:
- Stir all ingredients thoroughly till well mixed and leave to stand for one hour till doubled.
- divide the dough into 3 portions. Add in either the tumeric/coconut/onion fritter's ingredients to each of the portion.
- fry till done
The Gravy
[please adjust the taste and the ingredients to your liking, the recipe is merely some sorta rough guide...i normally dont follow to the exact..just 'campak-campak']
Ingredients:
500g Sweet potatoes + 500g potatoes - skinned, boiled and blend till smooth with the stock
2 tbsp Chili powder
4 tbsp chilli paste [add more if you like it hotter]
10 shallot - finely chopped
1 block of Gula melaka + granulated sugar to taste
Tamarind, soaked to extract juice to taste
vinegar to taste
2 tbsp dark soy sauce
3-5 tbsp dried shrimp [udang kepai would do] - optional
1 cube chicken stock- optional
150g peanut - roasted n pounded
sesame seed - dry roasted
enough tapioca flour to thicken the sauce
enough water to cook the gravy
Method:
- heat oil n fry the chilli and shallot till aromatic then add in the rest of the ingredients except for seasonings, sesame seed and tapioca flour
- season it to taste..and simmer it till slightly thickened. the longer it is simmered the better the taste will be.
- mixed the tapioca flour with water the add to the gravy to thicken and make it kinda gluey :D
- add sesame seed
The Companion
potatoes - skinned n seasoned with tumeric n salt the deep fried n sliced
tofu - fried n sliced
fish cake - fried and sliced
the 3 fritters - sliced
sweet turnip - shredded
cucumber - shredded
egg - boiled n halved
green chillies - sliced
extra roasted sesame seed for sprinkling
noodles - blanced
and your may add any ingredients to your liking..
