Chicken Kabsa 1st attempt..

been longing to savour this dish [eh..lamb kabsa to be exact] for days..but then, wuddehek
why not just fix it myself..its my forte afterall..:D . asissted with the recipe from ya salam cooking, here's wut i've managed to prepare for dinner..

Chicken Kabsah ala ninoZ

1 whole chicken, cut into 8 pieces
3 cup of basmati rice, washed, soaked and rinsed 
5 tablespoons cooking oil
4 bay leaves 
2 cubes chicken stock

diced :
2 onions
6 cloves garlic 
1 1/2 " ginger

pounded:
10 green cardamom 
2 teaspoon cumin 
2 teaspoon coriander
2 teaspoon black peppercorn
10 cloves 

4 cinnamon sticks 
rinds grated from 2 limes
 1 (15 ounce) can of tomato soup
salt to taste

6 boiled eggs  
carrot slivers, almond flakes and raisins 



1. Heat oil in an heavy-bottom pot on medium-high heat, saute diced ingredients till aromatic n golden. Add bay leaves, cinnamon sticks, grated lime rinds and pounded ingredients. Blend well and allow to sauté for 30 seconds.

2. Add tomato soup and chicken stock. Reduce heat to low-medium and simmer till the gravy  thicken. Add chicken allow to sauté for a 1 minute. Rotate chicken so that it gets all of the flavors. Add water until chicken is completely covered. Bring to a full boil then reduce to low. Cook for 35 minutes covered. Season with salt to taste

3. After the chicken has cooked reserve broth for rice. In a rice cooker, add rice and approximately 3 1/2 cup chicken broth, leave to cook in the rice cooker and lastly add carrot sliveres n raisin  .  Add chicken to a roasting pan and grill till the top side slightly browned. 

4. Add cooked rice to a serving platter with chicken arranged on top. Garnish plate with hard-boiled eggs, pine nuts, and raisins.

serve with simple salad [ tomato+onion+capsicum+cucumber] and mint dipping sauce [finely blend mint leaves+ green chillies+ fresh tomatoes+ salt + lime juice]
